The Culler de Pau restaurant, located in a privileged spot facing the Ría de Arousa, is a center of gastronomic and scenic homage to the surroundings. Culler’s kitchen is deeply connected to the land and the sea: it uses seasonal and local products, thanks to its close ties with local producers. This session of Ao Sol will be led by the renowned chef Javier Olleros, the driving force behind Culler de Pau. His commitment to the environment, tradition, and culinary quality has taken him on a journey that has earned numerous awards — such as two Michelin Stars, the Michelin Green Star for sustainability, and three Repsol Suns, among others — and multiple nominations, notably in 2022, his nomination for The Best Chef of the World, a list that includes the 100 best chefs in the world. The talk will provide firsthand insight into the vision of one of the most influential chefs in Galician and international gastronomy.
